Penne Pasta Recipe with Capers & Olives

So I was shopping the other day and found some capers – I haven’t had capers in years and thought, “Hey! I wonder what I could do with these!?” So I bought them and brought em home. My Mom used to make some kind of fish dinner with capers, but that still grosses me out to this day, so I hunted for a recipe that included other ingredients in my cupboard- and voila! Penne with Capers!

Garlic Penne Pasta w/ Capers & Olives

Ingredients

  • Penne Pasta
  • 2 TBSP lightly chopped capers
  • A handful or two of Olives, chopped in half
  • A box of cherry tomatoes, also chopped in half
  • 6 (!) Cloves of Garlic, sliced thinly
  • A handful of Basil, chopped roughly
  • 1 TBSP of Olive Oil
  • 1 tsp anchovy paste (this could easily be left out if you are grossed out by it, but it’s delicious)
  • salt and pepper to taste

Directions

  1. Prepare the penne as directed on the box
  2. heat oil and garlic in skillet on medium heat, until garlic turns golden brown
  3. add tomatoes, olives, capers, anchovy paste and simmer until the tomatoes break down into a sauce, stirring occasionally
  4. Toss with drained penne,
  5. Toss in basil leaves and salt & pepper to taste
  6. ENJOY
