Welp. It’s official, I love grilling, even after the first time trying it. I can’t believe I never realized how easy it actually is, after you actually get the grill assembled.
Getting home at 9pm after a long day of work makes it hard for me to be motivated to cook healthy dinners, but tonight I resisted the urge to get In n Out on the way home from work and instead stopped in at Trader Joe’s.
I’ve always been a little apprehensive about shopping at TJ for some reason, and I’m not sure why. Maybe because it’s so non traditional, or because I have an aversion to things I interpret as “trendy.” As it turns out, it’s cheaper to buy veggies there than the regular grocery store AND the people that work there are more friendly. So I guess tonight I broke through two of my weird barriers in life.
Anyway, I searched Google for an easy grilled chicken recipe, and I didn’t find anything that really suited me tonight, so I kind of winged it and made up my own. I’m sure I”ll modify this a bit each time as I always seem to do that as I learn more about my own recipes, but this grilled chicken was pretty delicious – and according to my food tracking app apparently only about 450 calories!
What you Need
- Boneless skinless chicken breasts
- 1 Tbsp Olive Oil
- 1/2 C lemon juice
- 1-2 Tbsp Rosemary
- a sprinkle of chile pepper
- a quick sprinkle of sea salt
How to Make
- preheat grill
- combine lemon juice, oil & spices in bowl
- dip chicken in marinade mixture
- grill em up for 10-15 minutes (or until the middle of the chicken is no longer pink
I also made some zucchini and yellow squash with butter, and sliced up a tomato w/ a little dollop of sour cream. Perfect quick meal for summer/after a long day of work!
